Knives are available with two different types of blades, stamped and forged. Stamped knives are punched out of a single sheet of steel, resulting in thin, light blades. They are usually priced lower than forged cutlery. Forged knives are top of the line, and made from one piece of steel that is heated until soft then pounded into shape with a hammer. Forged cutlery is strong & heavy with a bolster located where the knife meets the handle for safety and balance. Usually forged, kitchen cutlery is the best overall knife to use. There are different types of handles. All handles are good. It just depends on what your preference on the style and shape of the handle. If you like wood, you may want to go with the wood handle cutlery, or if you like the shine of steel we have stainless steel handles, and if you would like the comfort of plastic (poly) handles we have them to.
